Mother’s Day Brunch Menu: Easy and Delicious!

Every year when Mother’s Day rolls around for me, my husband always goes above and beyond to make amazing meals for me.  Many times, these meals are more complicated and intricate than maybe necessary…read: more dishes and mess than necessary.  Please, I beg you, do not get me wrong.  I am mountains of grateful for ALL of it but I think, like most moms, he over estimates the effort that I need.

This year, I’d like to make it a little easier for those husbands and significant others out there.  So moms that are reading this, send it to your husband.  Heck if you don’t want to do that, send me their email address and I’ll magically drop it in their inbox (jillvslife@gmail.com in case…).  I have put together a super simple but super delicious Mother’s Day brunch menu that you can even prepare the night before (and do all the clean up guys!) to make Mother’s Day morning the blissful, peaceful, easy morning your wife or S.O. is looking for.

On the menu we have Omelet Muffins, Fruit and Cream Cheese Pastries and Raspberry Lemon Mimosas.  I’m ready for Sunday right NOW!

Here are the recipes!

Omelet Muffins:

Ingredients:

  • 6 large eggs

  • 1 cup cottage cheese

  • 1 cup shredded cheese (I usually use sharp cheddar)

  • 1 can diced green chilies

  • 1/2 lb of breakfast sausage, browned (substitute any meat you would like here-one suggestion to make Mother’s Day a little fancier is to use crab or lobster!)

  • salt and pepper to taste

Directions:

  • Preheat oven to 350 degrees.

  • Beat eggs until fluffy.

  • Add all other ingredients and stir until combined

  • Spray muffin tin with cooking spray or use liners

  • Add 1/3 cup of the mixture to each muffin cup

  • Bake for 25 minutes at 350 degress or until set

    • These refrigerate and freeze well!
